Dear friends, you know I love experimenting el 'the other night I opened the refrigerator and I found that I had very little .. and so I thought I'd use what I had!!
Result: excellent! Here is the recipe of my risotto and its ingredients for 4 people:
- hot vegetable broth 50 g butter 1 white onion
- rice 320 gr 400 gr
- radicchio
- white wine : 1 cup
- olive paste: 2 tablespoons + decoration plate
- grain:
- pepper to taste: qb
Add rice and let it roast. This is a critical step because it allows you to earn a creamy risotto! Let soften the white wine, add the finely chopped radicchio you and a sprinkling of pepper. Cook the rice gradually add the hot broth until cooked. Ricordatei determination of the broth slowly because otherwise you could have a very liquid risotto! Turn off the gas. At this point you have to stir the risotto: add 2 tablespoons of olive puree, the rest of the butter. Leave the rice covered for a few minutes. Decorate the dish with the olive paste as shown, place the risotto in the center and a good dose of grit! Et Voila the dish is ready! Bon appetit!
